Catch Up on VeganMoFo: Recreating Memories, Quick & Weird

The VeganMoFo fun continues! And we’re catching up on challenges for Days 2, 3 and today’s Day 4! You’ll be amazed by Carmella’s sloppy drawing skills, how we do quick & easy and something really weird!

Day 2: Recreate your favorite childhood meal

We had a bit of a heat wave here in NYC. We didn’t feel like cooking or baking. So what’s the next best thing? Recreate our faves in artistic form! 

First up, American Boysenberry Grilled Cheese

Momma Macaroon would put creative spins on comfort food. She’d come up with her “cosmopolitan” versions of grilled cheese with different types of cheeses and fillings. However, I just liked grilled cheese. So, she decided to add in a bit of boysenberry preserves as a sweet surprise! It’s stuck with me to this day, now with vegan cheese slices!


Waffles & Berries

Who doesn’t love waffles??? We both grew up with them for Sunday morning breakfast or brunch! Of course, both sets of parents made sure got some fruit to make it all seem “healthy.” Vegan waffles keep the Sunday tradition going!


Peanut Butter Chocolate Chip Cookies

C is for Cookie!!! Carm and her mom would make these a lot! Sometimes, Momma Mac would toss in some roasted peanut or use chunky peanut butter. Baking with vegan substations keeps it as close to Mom’s recipe as possible!


Chick’n & String Beans

Grandma Macaroon would serve this dish up everyday for Carm! Now we veganize this whenever we can. So simple with fresh green beans and replacing the chicken with Beyond Meat, Gardein or tofu!


Day 3: Quick & easy meal

Avocado toast!!! Sliced or mashed avocado with nutritional yeast and a peppery spice blend (cumin, black pepper, sea salt and cayenne) kicks off the morning for us often! Lemon juice brightens it up. You can’t go wrong. It takes all of 5 minutes, if that!

Day 4: Weird food combination

May we present Hot Dog Sushi! We made this the first time a couple of years ago after a bit of winter cabin fever. Homemade Italian onions, mustard and relish, rice and nori wrapped around a veggie dog, we were surprised how good it was! We served it up with some wasabi ketchup, which was yummy!
