Monday Motivation got started Sunday night! Overnight oats are my jam, because you can literally “set it, and forget it!” Being so versatile, you can really mix anything with them. Why not have some Strawberry Lemonade Overnight Oats?!?! Overnight oats seriously have been a great addition to my breakfast repertoire.  You can make them sweet or savory. No matter what you do, you’ll get a hearty breakfast. I was wondering how to get away from my standard mixes of blueberries and bananas or chocolate and peanut butter.

I thought about one of my favorite flavor combos as being strawberries and lemons. I have a thing for strawberry lemonade, which I make at home as often as I can. How bad could it be to put that same flavor into a bowl of oatmeal? That’s how the Strawberry Lemonade Overnight Oats were born.

Not overly sweet with a nice tinge of tartness, that’s what I love about strawberry lemonade. To make that happen in these oats, I used freshly chopped strawberries and maple syrup and added in lemon juice and zest. A little vanilla extract was used to enhance the lemon flavor. To “level up” the oats, I added some chia seed, being a superfood and all.

Now, I could have used water for the oats, but NOPE! I like my oatmeal with some richness. I go with non-dairy milk, usually almond, cashew or Ripple (all unsweetened). It really adds a depth when soaking into the oats and chia seeds.

After being in the refrigerator overnight in an airtight container, these oats are ready to go as is. Eating them cold actually is a bit refreshing for a summer breakfast. When served hot, the strawberries and lemons have some summery notes to give you warm thoughts.

Strawberry Lemonade Overnight Oats
Serves 4
One of my fave summer drinks is Strawberry Lemonade. When done right, the flavor combo is amazing. For the winter, I've turned it into an easy breakfast bowl!

Ingredients
  1. 2 c. unsweetened non-dairy milk
  2. 1 c. uncooked rolled oats
  3. 1 c. fresh strawberries, chopped
  4. 2 Tbsp. fresh lemon juice
  5. 1 Tbsp. chia seeds
  6. 1 Tbsp. maple syrup
  7. 1 tsp. lemon zest
  8. 1 tsp. pure vanilla extract
  9. Fresh mint as garnish (optional)
Instructions
  1. In a large bowl, mix all ingredients, except mint
  2. Evenly divide the mixture between 4 pint-sized I8oz.) mason jars* & twist on lids
  3. Place in the refrigerator for a minimum of 4 hours, best if overnight
  4. When ready to eat**, you may enjoy cold or heat in a pot on stove top for 5 minutes or in a bowl in the microwave for 2 minutes
  5. Garnish with fresh mint
Notes
  1. *Don't have mason jars, use similar-sized food storage containers with air-tight lids
  2. **Should keep in air-tight mason jar for no more than 4-6 days

  1. Yum, I love the sound of this! I love overnight oats but always get stuck in a rut of making the same ones (usually a cherry and almond overnight oats for me!) so these sound like a great way to break out of the rut. I always use nondairy milk in mine too! And usually a some nondairy yoghurt. Makes them so nice and creamy. 🙂
